Restaurant Inspections: China King and Five Guys

The most recently available restaurant inspection reports from Oct. 5-23 in the Chantilly and Centreville areas.

In Virginia, restaurant inspection reports aren't quite as simple as getting a letter grade or an easy to see number rating to post in the front window.

That said, we all want to know how our favorite restaurants stack up on cleanliness and sanitation. Inspectors grade restaurants based on critical and non-critical violations.

A "critical violation" is one that "poses a direct or immediate threat to the safety of the food being served." Non-critical violations are generally related to cleaning or maintenance.

"Ideally, an operation would have no critical violations, or none which are not corrected immediately and not repeated. In our experience, it is unrealistic to expect that a complex, full-service food operation can routinely avoid any violations," according to Virginia Department of Health's website.

The site continues: "Keep in mind that any inspection report is a 'snapshot' of the day and time of the inspection. On any given day, a restaurant could have fewer or more violations than noted in the report. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment."

Below, find the latest restaurant inspection from the Virginia Department of Health. These inspections reflect visits from inspectors during the last few weeks. Some of the violations were corrected immediately during the recent inspections.

Date of inspection: Oct. 23
Critical (corrected during inspection): Raw animal food holding in a manner that may cause cross contamination of ready-to-eat food as follows: Raw chicken and raw beef stored above vegetables in the walk-in refrigerator.
Critical (corrected during inspection): Some food items were found hot holding at improper temperatures using a calibrated food temperature measuring device.
Non-critical (corrected during inspection): Observed that sign or poster that notifies food employees to wash their hands is not provided at all handwashing sinks used by food employees.
Non-critical: The lid for the sanitizing compartment drain at the 3-compartment sink is missing.

Five Guys Burgers and Fries

No violations were found during the inspection.

Date of inspection: Oct. 22
Critical: One or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment.
Critical (corrected during inspection): Observed raw shell eggs stored at room temperature.
Non-critical (corrected during inspection): Employees are not properly trained in food safety as it relates to their assigned duties.

Date of inspection: Oct. 18
No violations were found during the inspection.

Date of inspection: Oct. 18
No violations were found during the inspection.

Date of inspection: Oct. 17
No violations were found during the inspection.

Date of inspection: Oct. 16
Critical (corrected during inspection): Food items were observed cold holding at improper temperatures.
Critical (corrected during inspection): There is no Certified Food Manager present at the beginning of the inspection.
Non-critical (corrected during inspection): Observed food thawing using an improper method.
Non-critical: The cutting boards along the prep refrigerators are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Non-critical: The nonfood-contact surfaces of some equipment had accumulations of grime and debris.
